VINIFICATION:
These organic vineyards are located on infertile plots, benefiting from good exposition and red soils laden with Rhone Valley pebbles. The parcels are planted with vines that are over the age of 20 and among the first to be harvested. The climate is typically Mediterranean and influenced by the Mistral wind.

WINEMAKING:
The Syrah and the Grenache grapes are transformed into wine together. The harvest undergoes a traditional maceration of around 12 days to fully extract the grapes’ qualities. A strict winemaking checklist is respected.

TASTING NOTES:
This wine is a ruby red color. It exhales well ripened and jammy fruit aromas underscored by spicy notes. It is ample, round and warm on the palate. This is a well-balanced wine.

FOOD TO MATCH:
It goes very well with stuffed capsicum, saddle of lamb with herbs, roast lamb or grilled beef.

Cahors AOC: RHONE VALLEY
Dating back to the arrival of the popes in Avignon in the Middle Ages, wine growing has rapidly developed in the Rhône Valley, Côtes du Rhône (former name of the wine region). Wines of the Popes from the fourteenth century, these wines have been produced in the region since pre-Roman times.

The Rhône Valley played an active role in the establishment of French wine-industry appellations. The wines today have progressed and now occupy a major place among the best AOC (a French control certification) French wines.

Forming a corridor between the Mediterranean and Northern Europe, the Rhone Valley extends over six French departments and 75,600 hectares of vineyards, and produces over 3 million hectoliters of red, rosé, sparkling and dry white or sweet wines.

It is divided into two sub wine regions commonly distinguished as:

The Northern Rhône Valley (from Vienne to Valence) to the north. The vines are cultivated on very steep slopes making the harvest extremely arduous. The grapes are manually picked and have to be hauled up the hillside on trolleys, a feature which adds to the price. Syrah is the dominant red grape in this area.

The Southern Rhone Valley (from Montelimar to Avignon) to the south. The great majority is cultivated on the eastern side of the Rhône between the river bank near the town of Orange, and the Vaucluse-Luberon chain of mountains. The wines here are anchored by Grenache noir but typically include other grapes such as Syrah and Mourvedre. The reds range in color from deep crimson and ruby to almost purple and are generally full-bodied with rich but smooth tannins, though Lirac and others from the right bank tend to be somewhat lighter.

The wines grown between Vienne and Avignon draw their strength from the sun and caressing wind, and from the determination of the region’s many wine-growers to produce quality wines while respecting the environment. These wines, crafted and inspired by a great variety of grapes and terroirs, give pleasure to wine-lovers in all parts of the world.

Many varieties make up the wine. The most famous are Syrah, Grenache, Mourvedre, Viognier, Marsanne, Roussanne, Bourboulenc and Clairette.
