The wine is made from the Savanin grape variety, which is grown in the Arbois Puppillin appellation on blue marl soils. Harvested by hand from 20-year-old vines. The berries are sorted and gently pressed. Fermentation with natural yeast takes place in old large oak barrels (228-400 liters). Also conducted malolactic fermentation.
