Domaine de Villaine Bourgogne Côte Chalonnaise La Fortune is an organic monovarietal Pinot Noir red wine from the AOC Bourgogne produced by Domaine de Villaine.
Domaine de Villaine is a winery in Bouzeron, in Côte Chalonnaise, in the south of Beaune, Burgundy. Its vineyards are located on slopes that lie between 270 and 350 metres above sea level, in poor soils with a high limestone content. In order to make great wines,it seeks to ensure that its grapes ripen optimally and are in perfect health conditions. They have cultivated certified organically since 1997.
The vineyards for Domaine de Villaine Bourgogne Côte Chalonnaise La Fortune are between 20 and 25 years old. The soils of the plot are clay and limestone, and cover a total area of 2.3 hectares. They are harvested by hand to fully respect the integrity of the grape and in order to perform an initial selection of bunches while still in the field.
Domaine de Villaine Bourgogne Côte Chalonnaise La Fortune ferments in wooden tanks with a minimum of 2/3 of the vintage remaining without destemming, depending on the quality of the vintage. The must-wine remains in contact with the skins only for about 10-12 days to ensure that bitter and astringent flavours are not extracted from the seeds and stems. Lastly, the wine ages in the same wooden tanks for about 10-12 months, depending on the harvest and its ageing capacity.
