Mercurey Domaine de Villaine Les Montots is a monovarietal organic Pinot Noir red wine from the AOC Mercurey produced by Domaine de Villaine.
Domaine de Villaine is a winery located in Bouzeron, the first village of Côte Chalonnaise, in the south of Beaune, between Santenay in Côte d'Or and Rully and Mercurey in Côte Chalonnaise. Its vineyards have been cultivated organically since 1997 and are on slopes located between 270 and 350 metres above sea level, on poor soils with a high limestone content. In order to make great wines, it strives to ensure that its grapes ripen optimally and are perfectly healthy.
The plot for Les Montots, Domaine de Villaine Mercurey Les Montots, has an area of 1.6 hectares and its soils are clayey, calcareous and ferrous. It is located on a steep slope facing south. The vines are between 40 and 50 years old and are harvested by hand to make a first selection of the best grapes while still in the field and to ensure that the bunches arrive in the winery without breakages.
Once in the winery 2/3 of the vintage of Domaine de Villaine Mercurey Les Montots is vatted whole in wooden tanks. There it macerates with the skins and ferments with native yeasts for 14-17 days. Once fermented, the wine is aged in barrels and foudres for about 10-12 months. Both the maceration time and the ageing time will depend on the quality of the harvest, and on factors such as the level of maturity, the quality of the skins or their health status, and will determine its ageing potential.
Robust and vigorous, Domaine de Villaine Mercurey Les Montots is a true Mercurey which can age in the bottle for a period ranging from 15 to 20 years.
