Patient Cottat - Le Grand Caillou - Chenin Blanc | French White Wine

Patient Cottat was a famous “Master Goldsmith” in mid-19th century France. Born in Paris, he loved the Berry region of the central Loire Valley. His legacy is perpetuated through the Patient Cottat range of selected traditional Loire Valley wines, produced by the Fournier family.

Situated in the small village of Verdigny in the Sancerre region, the Fournier family has been making wine for many generations. The estate has grown from 13 acres in 1950 to almost 75 acres today, divided over the appellations of Menetou-Salon, Pouilly-Fumé, and Sancerre.

Land consisting of fine gravel and small pebbles based on thick layers of turonien limestone. The nature of the land with its mixture of gravel, limestone, and clay presents all the qualities which give Chenin Blanc its body, delicacy, and bouquet.

Vinification:
Grapes are harvested and go through successive sortings before undergoing classic white winemaking techniques such as slow and soft pressing, static débourbage, alcoholic fermentation to complete dryness, and the avoidance of malolactic fermentation.
