Signatory - Caol Ila - 7 Year Old 2013 | Single Malt Scotch Whisky

NOSE:
Tender and light caramel shimmers cloudy in the Premium Snifter, long and oily "legs" adhere to the glass wall. Slightly greasy smoke rises, sweet caramelized sugar flatters the nose, yellow fruits come into their own, minimal toffee and a hint of vanilla appear. Slightly earthy, a pinch of peat pulls through the nose, hints of fried bacon and fly ash gradually stimulate the flow of saliva with sweet fruit and vanilla.

TASTE:
The first sip flows thinly over the tongue, slightly bitter wood tones dissolve from soft smoke, hints of fly ash end in a minimal pinch of white pepper subtly sharp on the tongue. Smoky, mild, slightly stale and pale, slowly ashes and embers appear, the initially subtle sharpness on the tongue intensifies and finally gently tickles the tip of the tongue.

FINISH:
Sweet, with a hint of caramel and vanilla, peppery sharpness and ash emerge in the aftertaste. Little by little, the mouthfeel becomes greasy, the saliva is now massively stimulated. Slightly greasy or leftovers of bacon left in butter, hazelnuts appear, minimally peaty and earthy.
