Starward Nova is an Australian single malt whisky that embodies the innovative spirit of Melbourne’s Starward Distillery. Made from 100% malted barley and aged entirely in red wine barrels from local wineries, including barrels that previously held Shiraz, Cabernet Sauvignon, and Pinot Noir, Nova has a rich, fruity profile with distinct wine influences. The unique Melbourne climate—hot summers and cool winters—accelerates the maturation process, resulting in a bold, flavorful whisky. Nova is crafted with a focus on accessibility, designed to be enjoyed neat, on the rocks, or in cocktails.
Tasting Notes
NOSE:
Bright aromas of red berries, dried fruit, and toffee, with underlying hints of oak, vanilla, and light spices. There’s also a subtle, vinous quality, reminiscent of red wine tannins.
TASTE:
The palate is rich and full-bodied, with flavors of ripe orchard fruits, red currants, and plums. Sweet maltiness is balanced by notes of soft tannins, creamy vanilla, and baking spices (cinnamon, nutmeg). The red wine casks lend a gentle complexity, with hints of dried cherries and dark chocolate emerging mid-palate.
FINISH:
The finish is smooth and medium-long, with lingering notes of toasted oak, dried fruits, and a touch of spice. A soft wine-like dryness closes the experience.
